Magically good. It’s Peter Reinhart! I snuck in some vital gluten, which seemed to help. You can get the recipe online if you’re good enough a googler, but do try and get your hands on a copy of The Bread-baker’s Apprentice if you’re into baking bread. I found a copy a the library!

The texture is soft and chewy. The loaf isn’t dense, but it’s substantial in a good way. The taste is the best part, though. I didn’t know sandwich bread could taste so good! Mellow and slightly-sweet but still complex. Yummy! My only gripe is that 9×5 is too large a loaf for normal sandwiches. 8×4 (the other loaf pan I have) is too small – I guess we need to learn from Goldilocks. 8.5 x 4.5 should hit the spot.
